The expression about making mountains out of molehills is one of those old expressions people have been using for years. The people who said it probably haven't had to actually clean up after a mole intrusion, though. The remains of a mole's burrowing efforts aren't so easily dismissed in the real world. Though not a horrible disaster in the broad scheme of life, they're still a bother to deal with.
As to what a molehill actually is, they are the piles of dirt shoved above ground as a result of a mole's efforts to tunnel around in search of their favorite foods, grubs and worms. The dirt has to go somewhere, after all, and placing it above ground makes sense since moles rarely leave their tunnels.
The tunnels themselves may not be as visible, but they can be even more extensive than the hills. Moles are rather territorial, so when you see a bunch of hills in an area, that's all the result of a single mole. Mole tunnels are an extensive network of routes close to the surface, used for travel and to obtain food, and deeper tunnels, used for nesting and also finding food. Since the real problem is the mole itself, just stamping the hills flat and trying to fill in, cave-in, or crush the tunnels won't stop the moles because they'll just keep on digging and pushing up new hills as they make fresh tunnels.
Though molehills are the most obvious signs of them, there are more of an afterthought than the tunnels. Unfortunately, it's an afterthought that leaves a mess across your property. On the bright side, the molehills connect to the tunnel system, and that means you can use them to get rid of the moles.
Using their own molehills against them is much more effective than simply stamping down the hills and surface tunnels. Until you get rid of the moles themselves, the hills and tunnels will not only continue, but the moles will start breeding. They're not dangerous, but the damage they cause creates tripping hazards and can allow other pests access to your property. Recognizing molehills and keeping an eye on their tunnel progress can determine the extent of their digging. Once you know the signs of a mole intrusion, you can look into how to get rid of them. Fortunately, the molehills and surface tunnels make their removal much easier.
